Much of the commercially available lecithin is produced as a byproduct soybean oil extraction. However, there strong need for alternative feedstock due to presence allergens in soy lecithin. The objective present study was determine if oilseeds from Brassicaceae family such Brassica juncea, Sinapis alba, and napus represent viable source Total yields seed meals quantified. Composition extracted analyzed by high performance liquid chromatography mass spectrometry. extractable B. S. averaged 4.27, 4.26, 4.12 % weight, respectively. contained more phosphatidylcholine (4.40 mg g−1) than both juncea (2.94 alba (2.44 g−1). phosphatidylinositol concentrations were 1.51, 0.98, 1.09 g−1 napus, No significant difference ratios specific species found among three studied meals. Based on data obtained, we have demonstrated that mustard seeds are non-allergen phospholipids, including with potentially novel emulsifying characteristics.
